Caramelized Peppers

 I got the idea to try caramelizing peppers from listening to Francis Lam talk about it on The Splendid Table. They do take some time, but they aren't very labor intensive, and the result is a super sweet flavor bomb that will add depth to almost any dish. I've eaten these on top of a bowl of black beans, and on quesadillas. They would also be great in omelettes, frittatas, sandwiches or tacos. You could put them on pizza, or on toast with goat cheese.
