Fig Bars

 It's fig season! Fresh figs are great, but if you find yourself with more than you want to eat- this recipe is a great way to use them up. These fig bars have a delightful chewy, cake-y consistency. We've eaten them for breakfast, snacks, or dinner with bacon and eggs! I make mine using a gluten free 1:1 flour, but you could use regular flour. If you want to make the fig filling, but don't want to go to the trouble to make the bars, you could just eat it spread on toast or stirred into some plain, whole milk yogurt. It's delicious.
