Pimento Cheese and Arugula
This Pimento Cheese recipe is adapted from the one found in The Joy of Cooking. I love to eat it with arugula. The herbaceous ,peppery-ness of the arugula really complements the creamy, richness of the cheese. Obviously, this cheese is great as a sandwich spread, but it can also be eaten with crackers, cornbread, grits, or as part of a salad.
