Sweet Potato Quesadillas

This quesadillas uses Queso Fresco, which is a salty, fresh Mexican cheese. It can be found in the cheese section of most grocery stores, or in Latin grocery stores. If you can't find it, you could also use Monterey Jack. It would be different, but still delicious because, honestly? It's hard to mess up a quesadilla. I think the saltiness of Queso Fresco pairs particularly well with the sweetness of the sweet potato. We ate these quesadillas with a big ole pot of black beans and some lime-y slaw.
